Receita de humus de garabanzo

Ingredientes:
250 gr. de garabanzos, a remollo 12 horas.
¼ taza de sementes de sésamo moídas.
2 dentes de allo. 
1 ou 2 culleradas de zume de limón fresco.
Comino moído e sal ao gusto.

Escurrir os garabanzos, cubrilos con auga fría e cocelos ata que estén brandos.
Escurrilos, gardando media taza da auga da cocción.
Moer o sésamo tostado, e engadilo xunto co zume de limón, o aceite e os allos na batidora, botarlle o sal e o comino.
Engadir a auga que reservamos da cocción, e os garabanzos cocidos, continuar batindo, ata que fique todo mesturado e cunha textura non totalmente líquida.
Pode decorarse con olivas, pimentón, menta fesca...
